Not a very interesting post today, but below are some photos of food I’ve eaten this week.
This is curry-roasted squash. It is not all that exciting of a recipe, but it came from the new Food Network magazine. Has anyone else picked up a copy? I found many recipes in the issues that are vegan or easily veganizable. I was pleasantly surprised by that.
This is fusilli pasta with Creamy Pumpkin-Almond sauce. Simple and delicious!
This is another great slow-cooker meal. It is Vegetarian Hoppin’ John from Fresh from the Vegetarian Slow Cooker. It was so incredibly easy and tasted absolutely awesome. I can’t wait to have the leftovers for lunch in a few hours!

that Hoppin’ job looks amazing, Jennifer! perfect for cooler weather! totally gonna try that one! hooray for more crockpot yummies! i’m also going to have to try Celine’s recipe – the pumpkin-almond sauce sounds so scrumptious! i’ve never seen the Food Network magazine – that’s great that they’re recipes are easily veganizable! i love that! i visit their site a bunch for recipes as well – i find the same thing! yay! the squashes look beautiful – i really love that picture!

Hoppin John with sausage chunks is a great idea! I always have a bowl of that stuff for New Year’s for good luck. This time, I’ll have to add sausage!

I love that slow cooker cookbook! The recipes are so easy and every one that I’ve tried has been tasty.
I’m glad that the Food Network is finally showing us some love! I’ll have to keep an eye out for the mag.

This is a good time of the year for finding veg recipes in magazines, which sounds strange.
