Last night’s dinner was another opportunity for me to use up some about-to-go-bad produce from my fridge. I had some leftover kale from the potato kale enchiladas I made this past Sunday and I’d been eyeing the garlicky kale with tahini dressing recipe from VWAV (plus, everyone who has ever posted about has said it is delicious!). But I didn’t have a great amount of kale, so I really needed to use it as part of another dish rather than serve it on its own. I also had a green and purple bell pepper from my CSA that were starting to go soft. Seeing them sitting in the bowl next to last onion of the bunch made me start thinking about getting these three together and sauteeing up some peppers and onion. The idea of a wrap started to form in my head and I started thinking about all the flavors and thought they would all mesh well with falafel. So, I baked some up (it was just a fantastic foods mix (I definitely cut corners sometimes!)), sauteed the peppers and onions, added the kale in to wilt for the last few minutes and sprinkled it all with some garlic powder. I placed all of the ingredients on top of a sprouted grain wrap and doused them with the tahini dressing (which was really good, but I brought it to have with lunch today and I am certain it will only be better by then!). Now, peppers, onions, kale, falafel, and tahini sound really good together, but those are some pretty opinionated flavors. My secret ingredient to temper those opinions – MANGO! I swear, swear, swear, that mango goes well with everything. My husband even said that the mango is what helped to really bring everything in the wrap together. If there is a Mango Council somewhere, I want to be president of it.

I used veganrella on the quesadillas.
We had a 37 week appointment this morning. Adam has dropped, but I am only 1 centimeter dilated, so we doubt he will make his debut this weekend. Hopefully sometime next week.

those look great! the new blog is awesome, and you’ve inspired me to create on-the-spot stuff from leftovers. last night i made an awesome casserole of taters, asparagus, and cheez sauce–topped with french fried onions (which are vegan!). i plan on posting said dish during MOFO

Arthur is going to be a skeleton this year. We found a cute, not scary skeleton costume for him. Adam will be a little pumpkin and I am going to wear a witches costume, but a nice witch.
